Something recent!

For the past month, everything has found its way into everything: pumpkin oatmeal, pumpkin cookies, pumpkin smoothies, pumpkin muffins, pumpkin french toast. Last weekend was my favorite of the pumpkin treats: pumpkin cinnamon rolls!

This was seriously the best recipe for cinnamon rolls I've used in a long time. In fact, before I found this recipe, I was convinced that my cinnamon rolls would always just be dried out and kind of flavorless. But, this recipe really delivers on a nice chewy roll with a kick of pumpkin spice and a perfectly blended gooey center. You can find it here.

I met a friend that morning for coffee and I brought him a couple of these. Otherwise, I would have just eaten the whole pan myself. Anyway, he kept saying "there are really good!" So, it isn't just my opinion. Two of us agree, so it must be fact.

Waffles

Back in May, Nate and I had our own private waffle party. I had just mastered making waffles in my George Forman 4-in-1 grill (it might not be 4 exactly, but it certainly performs more than 1 task). Here is a stack of waffles from that occasion. I made both gingerbread (which was kind of weird for May, but still good!) and peanut butter (my favorite!) waffles that day. We didn't eat all of them for breakfast. The great thing about waffles is that they can be frozen for later. If you make & freeze your own waffles, your money doesn't end up going to the same sketchy company that makes things like poptarts and Jimmy Dean's sausage sandwiches. Gross, I can't believe I fouled my blog by mentioning the word "sausage." Ach, I did it again!

Onto the waffles! Waffles are occasionally allowed to be eaten with a smear of peanut butter or some jam (for those busy on-the-go types). Otherwise, either real maple syrup or fruit is the only suitable topping.

It feels like summer.

It's been warm in NC this week, so here's a throwback to summer. Basically, almond butter on toast drizzled with a bit of maple syrup and dotted with some loverly fresh cherries.

And now that that's over, I can go back to eating pumpkin flavored everything for the next 2 months.

Mmm, autumn.


When I got home tonight, I roasted an acorn squash and whipped up some delicious oven-baked stuffing. Alas, I ate it too quickly to take some photos.

So, instead, here is some awesome sushi I ate when I was in Maine earlier this month. From left to right: Sweet potato roll, sweet tofu packets (pickled ginger above and wasabi below) and avocado roll.


And now, it is time to drink some hot cocoa and work on my Halloween costume!

Let's get fired up!

I haven't been baking or taking food photos of my own food in a while. Luckily, I have an entire cache of photos I haven't yet uploaded anywhere. What better place to stash them than in my brand spanking new blog?

I call this the "Green-ya Colada." It's spinach, frozen pineapple, and So Delicious Coconut Milk (unsweetened) with a twist of lime. Served in a very "liberal" cup!
